Zymase

Zymase is an enzyme that catalyzes the fermentation of sugar into ethanol and carbon dioxide. It occurs naturally in yeasts. Zymase activity varies among yeast strains but in essence, without it we wouldn’t have booze of any kind!

Zymology (Zymurgy)

Zymurgy is the scientific study of fermentation, how yeast and bacteria act in certain environments and the practical uses of ferments. 

From a Spirit’s perspective, it’s this study that helps determine the selection of fermenting yeast and bacteria species that are most appropriate to use in the brewing stages, and how they will impact both the yield and the final flavour.
